Gingered Carrot Salad

This colorful and crunchy salad makes a healthy, simple and appetizing side dish. Spiced with ginger, cloves and nutmeg and marinated with orange juice and molasses, this gingered salad is best served chilled. Add white, red, purple or yellow carrots for a more colorful creation.

Directions:

Combine spices, sugar, and orange juice in large bowl. Stir thoroughly to combine. Add carrots and raisins or currants. Toss to combine. Chill, covered, before serving.

For an extra touch of color, add some chopped fresh parsley.
