These gourmet mini pizzas are sure to please, whether eaten as appetizers, snacks or entrées. Made with a plethora of spices and seasonings as well as sun-dried tomatoes, veggies, goat cheese and a splash of virgin olive oil for that rustic Italian flavor.

Onion and Herb Pizza Dough
1. Preheat the oven to 450 degrees.
2. In a large bowl, whisk together yeast, cane sugar and warm water until yeast and sugar are dissolved. Let stand for 10 minutes, until the mixture is creamy.
3. In a small bowl, mix the olive oil, Onion & Herb Seasoning and Italian Seasoning. Stir the herbed oil, flour and salt into the yeast mixture until smooth. Let rest for 20 minutes, punching the dough down occasionally.

Sun-Dried Tomato Pizza Sauce
1. In a food processor, blend sun-dried tomatoes, sun-dried tomato oil, water, Onion & Herb Seasoning and Italian Seasoning until well blended.

1. On a floured surface, use a knife to cut the dough into six equal pieces. Then use a rolling pin to roll out the dough into six uniformly-sized rounds, and place the rounds on a large, greased baking sheet.
2. Top each dough round with 1 tablespoon pizza sauce, using the back of a spoon to evenly spread the sauce. Then distribute the mushrooms and spinach evenly among the pizzas. Sprinkle each pizza with goat cheese and Parmesan cheese.
3. Bake the pizzas at 450 degrees for 10 to 15 minutes, or until the crust is golden and the cheese is melted.
