Homemade Spinach Egg Noodles

Homemade noodles are easier than you think -- no need for a pasta machine. This recipe features Simply Organic Spinach Dip Mix to add some vegetal green flavor to your noodles. Serve cooked noodles with alfredo, vodka or tomato sauce.

Fill a large stock pot 2/3 full of water and put on high heat.

Combine flour and Spinach Dip Mix in a medium sized bowl.
Make a well in the middle of the bowl and add the eggs. Mix together with hands until it forms a ball.

Transfer the dough ball and any flour still stuck to the sides of the bowl onto a floured surface. Knead the dough until the surface is smooth to the touch, adding more flour if needed.

Find a floured surface that is safe to cut on and roll out the dough into a 1/8-inch thick large rectangle. Cut long strips ¼” wide and pile together.

Add a palm full of salt to your boiling water and carefully drop in the noodles.

Cook for approximately 3 to 4 minutes until al dente.

Dough can be made a day ahead, wrapped in plastic and kept in the refrigerator. Top with an Alfredo or tomato sauce.
