Hot Ginger Toddy

While hot toddy recipes vary, they were traditionally brewed and drunk before going to bed or in cold, wet weather. It was a true “to your health” toast. We added a little spicy ginger for warmth and cider to sweeten the deal.
In a pot, combine all the ingredients except the spirit. Simmer, covered, for 20 minutes. Strain. Add the optional spirit and serve warm.
