Low-fat Scalloped Potatoes

This light version of scalloped potatoes lowers the fat content, but keeps all the delicious, hearty flavor. Add your favorite seasonings to make these potatoes your own. Serve with your choice of meat and a green salad.
- 3 teaspoons Frontier Organic Low Sodium Vegetable Flavored Broth Powder
- 1 1/2 pounds potatoes (about 5 medium)
- 1/2 cup water
- 1 cup milk
- 2 teaspoons cornstarch
- 1 cup shredded cheese
Preheat oven to 400 degrees. Peel the potatoes if desired.
In a large bowl, combine milk and water. Whisk in cornstarch and mix. Slice in potatoes. Fold in shredded cheese. Pour into lightly greased 2-to 3-quart casserole dish.
Bake for 40 to 50 minutes, until potatoes are tender. (Stir once halfway through.) Let sit to thicken before serving.
