Roasted New Potatoes with Garlic and Thyme

New potatoes are freshly harvested spuds that have a very high moisture content and wispy skins. They’re typically boiled, but can be baked or roasted. In this recipe, aromatic garlic and thyme are featured to bring out the buttery taste of these tender potatoes.

1. Preheat oven to 375 degrees.
2. In a large pot, bring water to a boil. (Use enough water to generously cover potatoes when added.) Add potatoes, bring water back to a boil, then reduce heat. Cover partially and cook for 5 minutes. Drain.
3. Combine oil and seasonings in a large bowl. Add hot potatoes and coat well. Arrange potatoes in a single layer in a baking dish. Bake 20 to 25 minutes, or until tender and golden brown. Season to taste.
