With three kinds of beans -- white kidney, red kidney and black -- each warming spoonful hits the spot every time. This chili may also be served with a variety of toppings, including shredded cheese, chopped green onion, black olives, chopped tomato and rice.

In large, non-stick skillet, heat the oil over medium-low heat. Add the onion and cook until tender, 5 to 10 minutes. Add the remaining ingredients and bring to a boil. Reduce heat and simmer, covered, for 30 minutes.
