
Follow these basic guidelines for delicious dressing every time: Use 1/2 cup of vinegar and/or lemon juice per cup of oil. To this base, add a pinch of a favorite spice or two, along with some salt and pepper, and blend well. A dab of honey or tamari, or – for a creamy dressing – yogurt, buttermilk, mayonnaise or sour cream will complete your recipe.
This Fancy French Dressing is one of our favorites: 1/2 teaspoon of ground mustard
1 cup olive oil
1 teaspoon sea salt
1 1/2 teaspoons paprika
1 1/2 teaspoons tarragon
1 1/2 teaspoons basil
1 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/3 cup herb or wine vinegar
2 tablespoons lemon juice
1 teaspoon honey
Blend all ingredients well. For a creamier dressing, substitute mayonnaise for the olive oil.
