What is Brining?

Brining is a process of marinating the turkey in a salt and spice solution. The process is designed to saturate the meat with the salt and thereby locking in moisture when cooked. There are a few keys to successful brine. First, you need to have the correct ratio of salt to water. Try to buy a turkey that has not already been seasoned with a salt solution. Second, the turkey has to be completely submerged in the brine for the whole set time. And finally, brining takes time. Depending on the size of the turkey you should marinate the bird overnight.

Brine Solution

2 gallons water
16 oz. Frontier Organic Seasoning Salt
1 10 to 15 pound turkey

You will need a large container to hold the turkey in. A roaster that will fit in your refrigerator or a clean bucket or cooler that you can refrigerate or set in cold garage. Add the water and seasoning. Stir until dissolved. Place turkey in mixture. Remember to remove innards if they came with turkey. Turkey must be completely submerged. If you need to add more water, add 1 cup at a time plus 1 tablespoon of salt to keep the ratio. Refrigerate or keep at 32 to 40 degrees for at least 10 hours but better if closer to 24 hours. Remove turkey from brine and pat dry. Place in roaster and cook according to directions with turkey. Always make sure to cook your turkey to the recommended temperature and not a set time. This will ensure your turkey is done to perfection.

Cooking Time: Up to 24 hours of marinating

Chef Suggests:
If you only found a turkey already in salt solution, reduce the above seasoning amount by 1/2 cup.
If using a cooler, make ice blocks in old water or milk containers and place in cooler with turkey and brine mix.
Try a tasty variation by using 2 cups of Frontier Organic Poultry Rub in place of the Seasoning Salt.


Homemade Stuffing

Frontier herbes de provence2 cups bread cubes
2 tablespoons seasoning Frontier Organic Herbs de Provence or Frontier Organic Poultry Seasoning
1/4 cup shredded carrots
1/8 cup finely diced celery
2 tablespoons Frontier Organic Chicken Broth powder
2 cups water

Preheat oven to 375. Combine all dry ingredients and toss together. Add water slowly and spread mix in shallow baking pan. Bake for 30 minutes. Remove from oven and fluff with fork. Serve immediately. Makes 8 servings.

Chef Suggests:
You may also substitute Frontier Organic Carrot Flakes and Celery Flakes in this recipe. Use 1/8 cup carrots and 1/8 cup warm water to rehydrate. For the celery, still use 1/8 cup of the flakes and 1 tablespoon warm water.

Ginger Bars

Frontier Organic Vaniilla Extract3/4 cup vegetable shortening
1 cup sugar
1/4 cup molasses
1 egg
1/2 teaspoon vanilla extract
2 cups flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt

In a mixing bowl, combine shortening, sugar, molasses, egg, and vanilla. Beat on medium speed until smooth. Add flour, baking soda, cinnamon, ginger, and salt. Mix on low speed until blended. Spread in an ungreased 15 x 10 x 1-inch baking pan. Bake at 375 degrees F for 12 minutes or until lightly browned. Do not overbake. Cool on a wire rack before cutting.  

Makes approx. 4 dozen.
