Not just for baking

Vanilla is prized around the world for the delicious flavor it adds to baked goods. But its range of uses can extend far beyond cookies, cakes and sweets!

· Add a few drops to salads that contain citrus fruits to serve as an antidote to the effects citrus can have on the stomach, and to impart a little extra sweetness.

· The same goes for tomato sauce. The addition of a little vanilla helps neutralize the acidity.

· A few drops of vanilla helps bring out the natural sweetness of vegetables. And don't forget to add some to dishes that contain hot chili peppers. It helps tame the heat, while at the same time releasing the sweetness and flavor of the peppers. If you make homemade salsa, you may want to consider adding a little vanilla to your recipe.

· Vanilla is also a great flavor accompaniment to meats, seafood and poultry. Add a bean pod or a few drops of vanilla to your marinades, your sautéing oils, or your sauces to deliver new flavor to these dishes.

· A little vanilla added to a bottle of olive oil or vinegar can bring newfound freshness and flavor to salad dressings.

(Vanilla can't be properly steam distilled because it has components that aren't captured by this process. Extraction with hydrocarbon solvents -- vanilla absolute -- has been made virtually obsolete by CO2 extraction technology, which produces higher yields of extract that is much more complete and true to the aroma of the cured whole vanilla bean.)

There are fewer scientific studies of the effects of vanilla than of less expensive and more commonly used aromatherapy plants. But studies at the Smell and Taste Treatment and Research Foundation in Chicago have indicated that vanilla can both promote sexual arousal in men and also help people fall asleep faster and more quickly into the REM or dream state.
