The name kukicha means twig tea. Kuchika originated in Japan and is not considered a true tea. The small branches of the tea plant are harvested and roasted to produce a mellow, low tannin tea.
Unlike leaf teas, kukicha is best prepared by simmering for at least 10 minutes. It contains no caffeine and none of the astringency of leaf teas. It is considered a soothing tea, suitable for children and adults. Kukicha was made popular in the U.S. by its use in macrobiotic diets.
