1 pound diced, unpeeled red potatoes
1 cup diced yellow bell pepper (about 1 large)
1 cup sliced shiitake mushrooms
3 tablespoons water
1 tablespoon Simply Organic Grind to a Salt Seasoning
, coarsely ground
1. Preheat oven to 400 degrees.
2. In a 2-quart casserole dish toss together potatoes, peppers and mushrooms. Whisk water and seasoning in a small bowl and pour over potato mix.
3. Bake 30 to 40 minutes until potatoes are tender.
Top each serving with an additional twist or two of finely ground Grind to a Salt Seasoning.
This side dish can be made the night before and reheated before serving.
