Carrot Caraway Quiche
1 pie shell
1 onion finely chopped (approximately 2 tablespoons)
2 medium carrots, finely chopped or grated
1/4 cup grated cheese (Swiss or cheddar)
6 medium eggs
1 cup milk
1/4 teaspoon Frontier Sea Salt
1/4 teaspoon Frontier Organic Black Pepper
1 teaspoon Frontier Organic Caraway Seeds
1. Preheat oven to 350 degrees.
2. Sprinkle onion, carrot and cheese evenly on the bottom of the pie shell.
3. Beat together the eggs, milk, salt and pepper until well blended and slightly frothy. Pour over vegetables and cheese and sprinkle caraway seeds on the top. Bake for 40 to 45 minutes or until quiche is firm and knife comes out clean.
As prepared, each serving contains 160 calories, 10g total fat, 145mg cholesterol, 260mg sodium, 12g total carbohydrate and 7g protein.
