Chipotle Dressing

This dressing is wonderful on a taco salad, baked potato, or potato salad. Give it a try on a sandwich or as a dip for veggies.

Ingredients
1/2 pound silken tofu
1/4 cup sunflower or olive oil
1 tablespoon nutritional yeast
2 tablespoons drained capers
1 1/2 tablespoons lemon juice
1 teaspoon honey or agave nectar
1 tablespoon apple cider vinegar
1  whole chipotle chile canned in adobo, or to taste
3 tablespoons chopped red onion
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1/2 teaspoon paprika
3 cloves garlic, minced
Directions
Place all ingredients in a blender or food processor and blend until smooth.
Nutrition Facts
As prepared, each serving contains 90 calories, 8g total fat, mg cholesterol, 152mg sodium, 3g total carbohydrate and 3g protein.
