Chipotle Hummus makes a definite statement with its bold flavor.
1 basic hummus
recipe, prepared without the salt
1/2 dry chipotle pepper
1/4 teaspoon oregano
1/4 teaspoon ground coriander
1 tablespoon chopped yellow onion salt
Toast the chipotle pepper and the oregano. Toasting releases the perfume of the chipotle and spices, rendering a wonderful bouquet of flavors. Remove the seeds and veins and break up the dry chipotle pepper. Add desired amount of hummus and blend thoroughly. Since chipotles are hot, try a small amount and then add to desired taste. Blend in the oregano, coriander, onion, and salt.
Pour mixture into a serving dish. Allow mixture to rest for 1-2 hours for flavors to thoroughly blend.
