Classic Marinara Sauce

Versatile, popular and easy to make, this staple of Italian cooking has developed an even better reputation in the last few years -- the antioxidants in tomatoes, particularly when combined with olive oil, has important health benefits for men.

Ingredients
2/3 cup diced onion
1 1/2 teaspoons olive oil
1/2 tablespoon minced fresh garlic
1/4 teaspoon red chili flakes
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
6 cups canned whole tomatoes
1 1/2 cups canned tomato purée
1 tablespoon honey
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
Directions
In a large saucepan, sauté onion in olive oil over low heat. Add garlic and brown slightly. Add red chili flakes, dried herbs and sauté for about 30 seconds.

Immediately add whole tomatoes and tomato purée. Simmer for approximately 1 hour or until sauce has thickened. Add honey, fresh basil and fresh oregano. Purée slightly in a blender, if desired.
Chef Suggestions
Serve 1/2 cup over 1 cup cooked pasta.

Rub dried herbs between your hands before adding to other ingredients to release their volatile oils.
