Curried Cornbread Muffins
1/4 cup honey
1/2 cup oil
1/2 cup soy milk
1 cup whole wheat flour
3/4 cup unbleached white flour
1 cup cornmeal
4 teaspoons Frontier Organic Baking Powder
1/4 cup Frontier Non-Instant Dry Milk Powder
1 1/2 tablespoons Frontier Organic Curry Powder
1 cup water
1. Preheat oven to 350 degrees.
2. Beat the honey and eggs together until blended. Add oil and soy milk and stir well. Add remaining ingredients and mix only enough to moisten; do not over mix.
3. Turn batter into oiled muffin tins. Bake for 15 minutes.
Serve warm with honey butter. Also good served at room temperature with cream cheese.
As prepared, each serving contains 200 calories, 9g total fat, 30mg cholesterol, 140mg sodium, 26g total carbohydrate and 4g protein.
