2 tablespoons olive oil
2 to 3 pounds raw stewing beef
1 package (10 ounces) baby carrots
2 large yellow onion, chopped
1 package Simply Organic French Onion Dip Mix
2 tablespoons instant tapioca
3 tablespoons Simply Organic Brown Gravy Mix
1/4 teaspoon Simply Organic Black Pepper
6 cups gold potatoes, peeled and cubed
1 bunch celery, chopped on bias
1 can (15 ounces) diced tomatoes
3 cups seasoned tomato juice
Preheat oven to 350 degrees.
Heat olive oil in a nonstick pan and sear beef over medium-high heat, approximately 1 to 2 minutes per side.
Combine baby carrots, onion, Dip Mix, tapioca, gravy mix, pepper, potatoes, celery, tomatoes, and juice in a large bowl, mixing thoroughly. Add browned beef to vegetable mixture.
Place in a roasting pan, cover and bake for 3 hours without peeking.
