Eggplant Parmigiana Over Fettuccine Alfredo

1  eggplant (about 12 ounces)
1 teaspoon Frontier Sea Salt
6 tablespoons vegetable oil
Dredging Mixture
1/3 cup flour
1  egg
1 tablespoon water
1/2 cup dry bread crumbs
1 package Simply Organic Italian Herb Spaghetti Sauce Mix, divided
Italian Sauce
1 can (8-ounces) no-salt-added tomato sauce
1/2 cup water
4 ounces shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
8 ounces fettuccine
1 package Simply Organic Alfredo Sauce Mix
1 1/2 cups milk
1 1/2 tablespoons butter
1/4 cup grated Parmesan cheese
Slice the eggplant into ½-inch thick slices. Sprinkle with salt and set in colander for 30 to 40 minutes. Press a paper towel onto each slice to absorb all of the liquid.

Put the flour in a small dish. In another small dish, combine egg and 1 tablespoon water. In a third small dish, combine bread crumbs with 1 tablespoon of the Simply Organic Italian Herb Spaghetti Sauce Mix.

Dredge each slice of eggplant in the flour, then dip in the egg mixture, and finally in the bread crumbs mixture so that each side of the eggplant is coated.

Preheat a frying pan over medium-high heat. Add vegetable oil and let it get hot. Fry the eggplant until golden brown on each side, flipping only once. Place the eggplant slices on a plate that has been lined with a paper towel.

Preheat oven to 400 degrees.

Combine the remaining Simply Organic Italian Herb Spaghetti Sauce Mix with the tomato sauce and ½ cup water. Pour into an 11x7-inch baking pan. Arrange eggplant slices in a single layer over the sauce. Sprinkle with mozzarella and 2 tablespoons Parmesan. Bake for about 15 minutes or until the cheese is melted and the sauce is bubbly.

Meanwhile, prepare fettuccine according to package directions. At the same time, prepare the Simply Organic Alfredo Sauce Mix per package instructions. When pasta is fully cooked, drain. Stir pasta into prepared Alfredo sauce.

Place a portion of Fettuccine Alfredo on each dinner plate. Top with eggplant and tomato sauce.
