Mariscos in Coconut Sauce
1 pound mixed seafood (clams, shrimp, mussels), cleaned
1 Hungarian yellow or Anaheim pepper, sliced
2 tablespoons olive oil
1 can coconut milk
1 cup white wine
3 tablespoons flour
2 tablespoons Simply Organic Chophouse Seasoning
, coarsely ground
2 tablespoons diced pimentos
1 cup halved cherry or grape tomatoes
freshly prepared fettuccini noodles (8 ounces)
In a 4- to 5-quart soup pot, sauté seafood and peppers on high heat for 4 to 6 minutes in olive oil. Reduce heat and add coconut milk, wine, flour and Simply Organic Chophouse Seasoning. Bring to a simmer. Add pimento and tomato.
Serve as soup or over prepared pasta noodles.
Top each serving with an additional twist or two of finely ground Chophouse Seasoning.
Serve with a salad of fresh greens.
