Mashed Sweet Potatoes with Apples

The sweet, dense flesh of sweet potatoes is enhanced by tart apples, cinnamon, and nutmeg in this recipe.

Ingredients
2 pounds sweet potatoes, scrubbed
1 1/2 tablespoons butter
1/2 cup chopped onion
2  large Granny Smith, apples, peeled, cored, and coarsely chopped (2 1/2 cups)
2 1/2 tablespoons water
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Directions
Bring a large pot of water to a boil. Add the sweet potatoes and boil gently for 30 to 35 minutes, or until tender. Drain and let cool slightly.

Meanwhile, in a large skillet over medium heat, melt 1 tablespoon of the butter. Add the onion and cook, stirring occasionally, until golden and tender, 6 to 8 minutes. Add the apples and water. Cover and cook over medium-low heat, stirring occasionally, until tender, 10 to 15 minutes.

Peel the sweet potatoes, cut into chunks, and put into a large bowl. Add the remaining 1/2 tablespoon butter, the salt, pepper, cinnamon, nutmeg, and apple mixture. Mash until smooth, then spoon into a serving dish. Serve hot.
