Papdi (Crisp Wafers)
A crisp wafer to be used with chutney and other sauces/dips
1 cup all-purpose flour
1/4 cup semolina flour
2 tablespoons olive oil
1/2 teaspoon Frontier Sea Salt
1/3 to 1/2 cup warm water
2 to 3 cups vegetable oil (for frying)
1. In a mixing bowl, combine all ingredients except water and oil. Slowly add the water, stopping occasionally to knead dough. Add enough water only to get the dough to stick together. Cover and set aside for 15 minutes.
2. Divide dough in half. Roll one piece to less than 1/4-inch in thickness.
3. With a fork, make holes in rolled out dough to prevent bubbling when frying. Cut into 2 X 2-inch squares. Repeat with other half of dough.
4. Heat oil in large skillet or wok. Place squares in groups of 4 to 5 at a time in oil to fry. Fry on both sides until golden brown. (Oil should be hot enough to cook squares in 2 to 3 minutes.) Remove and let cool before serving.
Serve with a sliced boiled potato and Cilantro and Pea Chutney
