Poppy Seed Muffins

3/4 cup granulated sugar or  Frontier Organic Cane Sugar
1/4 cup softened butter or 1/4 cup soy margarine
1 teaspoon Frontier Organice Orange Peel or  grated orange peel
2  eggs or  2-egg substitute
2 cups unbleached all-purpose flour
2 1/2 teaspoons Frontier Organic Baking Powder
1/2 teaspoon Frontier Sea Salt
1/4 teaspoon Frontier Organic Nutmeg
1 cup milk
1/2 cup chopped pecans
5 tablespoons Frontier Organic Poppy Seed
1. Preheat oven to 400 degrees.
2. Cream sugar, butter and orange peel. Add eggs, one at a time, beating well after each. In a separate bowl, combine flour, baking powder, salt and nutmeg. Add to creamed mixture alternately with milk, beating well after each addition. Fold in nuts and poppy seeds.
3. Spoon batter into greased muffin tins until about 3/4 full. Bake about 20 minutes.
