Pot Roast

Yes, you can cook a pot roast on the grill, with some patience and a few tricks. The meat can be cooked on the grill in a Dutch oven, in a rib rack, or directly on the grill. It does need moisture for ideal tenderness, so add liquid to the drip pan. Beer, wine, or water are all delicious.

1 teaspoon salt
1 teaspoon grill seasoning
1 teaspoon cracked black peppercorns
1 teaspoon cracked green peppercorns
1 teaspoon cracked white peppercorns
3 tablespoons olive oil
2 pounds beef tri-tip roast
2 cups beer
For rub, combine all ingredients except oil, meat, and beer in small bowl. Brush meat with oil and sprinkle with rub; gently rub into the meat. Let stand for 15 minutes.

Prepare grill for indirect low heat, placing 2 cups beer in the drip pan. Sear roast on all sides over direct heat, then place over drip pan.

Insert a heat-resistant meat thermometer and cover grill. Grill for 50 to 60 minutes or until meat reaches 155°. Let meat stand, covered, for 10 minutes before slicing to serve.
Chef Suggestions
Take advantage of the grill and cook vegetables with your roast, just like you do in the oven. Tender grilled carrots, onions, and potatoes are delicious too.
