Spiced Tomato Raita

Fresh tomatoes and verdant cilantro come together to jazz up plain yogurt. This version of raita is a simple Indian homemade way to serve up a quick salad. In most Indian homes, a raita is often made with a variety of vegetables and spices. Tomatoes add a subtle sweetness to the plain yogurt and give it much-needed texture.

1 cup plain yogurt, beaten
1  large tomato, finely chopped
2 tablespoons minced fresh cilantro
1/4 teaspoon cumin powder
pinch red chili powder
 salt, to taste
Mix all the ingredients together in a large bowl. Serve cold.

For best results, use a vine-ripened tomato for its intense flavor. If you like your raita a bit chunkier, deseed the tomato before chopping it and adding it in.

When mixing the tomato pieces into the yogurt, remember that they will continue to break down and release their juices. Prepare this raita immediately before serving to avoid it becoming too thin.
Chef Suggestions
Pair this raita with a meal that consists of a rich curry or lentil dish or a hearty pilaf. It also goes great wtih the stuffed Indian breads called parathas.
