4 just-ripened tomatoes
2 cups cooked rice
1/4 cup water
1 to 2 tablespoons Simply Organic Seafood Seasoning
1/2 cup shredded cheese
1. Preheat the oven to 350 degrees.
2. Gently cut the core out of the tomatoes, making a cavity.
3. Mix rice, water, Seafood Seasoning and cheese together. Fill tomatoes with mixture and place in baking pan. Cook for 30 minutes or until rice and tomatoes are tender.
Top with more shredded cheese.
Add diced vegetables to the rice mixture.
Add tofu to the rice for an additional protein source.
