Tofu and Amaranth Stuffing
1 cup water
1/4 cup amaranth
1/2 pound tofu
1/4 cup shredded carrots
1 package Simply Organic Vegetarian Brown Gravy Mix
Preheat oven to 400°.
In a small saucepan, bring water to a boil and add amaranth. While the oven heats and amaranth boils (approximately 5 minutes), in a lightly greased 8- to 9-inch cake pan, mince tofu using a fork to create a crumbled look. Toss in shredded carrots. Gravy Mix over tofu mixture. Add amaranth and stir well. Bake 30 to 40 minutes.
