Whole Wheat Snickerdoodles

The addition of whole wheat flour adds a nutty flavor as well as fiber. If you like, these can be made using all white flour instead.

Ingredients
1/4 cup butter or stick margarine, softened
1 cup packed brown sugar
1  large egg
1 tablespoon corn syrup
2 teaspoons vanilla
1 cup flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
Coating
1/4 cup sugar
2 teaspoons cinnamon
Directions
Preheat oven to 350 degrees.

In a large bowl, beat butter and brown sugar until well combined -- the mixture will have the consistency of wet sand. Add egg, corn syrup and vanilla and beat until smooth.

In a medium bowl, combine flour, whole wheat flour, baking soda, cinnamon and salt. Add to the sugar mixture and stir by hand just until combined.

Combine sugar and cinnamon in a shallow dish. Roll dough into 1"-1 1/2" balls and roll in cinnamon sugar to coat. Place about 2" apart on a cookie sheet that has been sprayed with nonstick spray.

Bake for 12-15 minutes, until pale golden and just set. Transfer to a wire rack to cool.
