1 cup yogurt
1 tablespoon lemon juice
1/2 cup unsweetened pineapple or 1/2 cup unsweetened orange juice
1/4 cup dried and stewed apricots or 1/4 cup dried and stewed or peaches
1 tablespoon honey
2 egg whites
Mix the yogurt, lemon juice, orange or pineapple juice, stewed fruit, and honey together until all ingredients are blended. Put the mixture into a freezer tray and freeze until just firm. Take it out, put in bowl, and mash until mixture is smooth and creamy.
Beat the egg whites until stiff and fold them into the fruit mixture. Return to freezer tray and refreeze.
Try lemon thyme, coriander
, or your favorite spice in this one.
As prepared, each serving contains 90 calories, 1g total fat, 5mg cholesterol, 70mg sodium, 16g total carbohydrate and 5g protein.
