CHEESY CHILI POTATOES

2 cups (16 ounces) American or cheddar cheese
1 cup low fat sour cream
30 ounces (10 cups) frozen or fresh hashbrowns
1/2 cup water
1 package Simply Organic Mild Chili Mix
2 tablespoons dehydrated parsley leaf

Turn large crock pot on high. Cut cheese into chunks and add to crock pot, along with sour cream and hashbrowns. In small bowl, combine water and Vegetarian Chili Mix. Pour over potatoes. Cook until potatoes are tender, approximately 50 to 60 minutes, stirring occasionally. Turn crock pot to warm and stir in parsley.
