1 package Banana Bread Mix
Powdered egg replacer equivalent to two eggs*
3/4 cup warm water
2 ripe, peeled and mashed medium bananas

Preheat oven to 350° F. In a large bowl, combine banana bread mix and egg replacer. Mix in water and mashed bananas. Stir until just moisten. Pour into lightly greased 9" X 4" loaf pan. Bake for 50 to 60 minutes, until center tests done with a toothpick or knife. May take 5 to 10 minutes longer, depending on oven. Cool for 15 minutes in pan, then remove loaf from pan and finish cooling on rack. Cool completely, as bread will slice better.
