CARROT MUFFINS

1 package Carrot Cake Mix
1 cup shredded carrots
1/2 cup water
2 large eggs

Follow directions on box to prepare carrot cake including preheating the oven to 350 F. Grease muffin pan and pour mix evenly into slots. Bake for 30 to 35 minutes or until center tests done.

Makes 8 regular muffins or 6 large.

As prepared, each serving contains 150 calories, 1.5 g of fat, 35 mg of cholesterol, 360 mg of sodium, 37 g of carbohydrates and 2 g of protein.
