RASPBERRY THUMBPRINT COOKIES

1 package Cocoa Biscotti Mix
1/2 cup melted butter
4 eggs
3/4 cup raspberry jam

In a large mixing bowl, cream together the Simply Organic Cocoa Biscotti Baking mix, butter and eggs. Chill dough for 30 minutes. When ready, preheat oven to 350°. Form dough into 1 inch balls and place on lightly greased cookie sheet. Make an indentation with your thumb and fill with raspberry jam. Bake to 10 to 12 minutes.

Makes about 2 dozen.
