
The Sunflower, Helianthus annuus, is a well known food and decorative plant. The seeds are high in protein and low in saturated fat. The seeds can be ground to make sunflower butter, but be careful. The USDA notes that some who are allergic to peanuts are also allergic to sunflower seeds.

1/2 cup canola or olive oil
1/8 cup apple cider vinegar
2 tablespoons cane sugar
1 package French Onion Dip Mix
2 cups (about 6 to 8) shredded broccoli stalks
1/3 cup toasted sunflower seeds
In a small mixing bowl, blend the oil, vinegar, cane sugar and French Onion Dip Mix. Place broccoli and sunflower seeds in a large mixing bowl. Toss in liquid dressing mix and chill.

Serve as side with fresh deli sandwiches. Add in 1/8 cup shredded carrots for flavor and color. Toast sunflower seeds by tossing seeds and 1 tablespoon vegetable oil together and lay out on baking sheet. Bake at 325° for 6 to 8 minutes, checking seeds often so not to burn. They will develop a great flavor in just a few minutes. Set aside to cool before use.
