MEXICAN MANICOTTI

1 package (8 ounces dry) manicotti noodles
2 beaten egg whites
1 container (16  ounces) cottage cheese or ricotta cheese
1 package (8 ounces) soften low fat cream cheese
1/2 cup shredded Parmesan cheese
1 package Guacamole Dip Mix
1 jar (25 ounces) marinara sauce or diced tomatoes

Preheat oven to 350°. Cook manicotti noodles as directed until nearly cooked. Drain with cold water and set aside. In a large mixing bowl, beat egg whites. Blend in all ingredients, except marinara sauce. Fill noodles with mixture and place in lightly greased 3-quart casserole dish. Pour marinara sauce on top of stuffed manicotti. Bake 25 to 30 minutes.

Chef Suggests:
Serve with a tossed Caesar side salad. Add cooked sausage or hamburger to filling for a heartier version. If using diced tomatoes, sprinkle another package of Guacamole Mix on top of the tomatoes.
