1 1/2 cups water
1 package Caesar Dressing Mix
1 cup cornmeal
1 cup diced tomatoes
1/2 cup shredded Parmesan cheese
In a medium saucepan, whisk together water and Caesar Dressing Mix. Bring to a boil, then stir in cornmeal. Reduce heat and cook on low for 5 minutes, stirring. Spread in well-greased, 2-quart casserole pan. Cover and chill until ready to heat and serve. When ready, cut chilled polenta into squares and leave in casserole pan. Broil polenta on high 10 to 15 minutes, until a golden crisp develops on top. Top each square with a scoop of tomatoes and shredded Parmesan. Broil 5 more minutes.
