8 ounces dry capellini or other thin noodle
1/2 cup sliced shiitake or other mushroom
1/2 cup thinly sliced red bell peppers
1/4 cup rice vinegar
3 tablespoons soy sauce
1 tablespoon vegetable oil
1/2 cup water
1 package Red Pepper Curry Vinaigrette Dressing Mix
Boil pasta in large saucepan until 3 to 4 minutes from being done. Add sliced vegetables. In a medium bowl, combine vinegar, soy sauce, oil, water, and Red Pepper Curry Dressing Mix. Drain pasta and toss with the dressing.
