ITALIAN STEW

1/2 pound Italian sausage
2 tablespoons vegetable oil
1/2 cup diced celery
1/2 cup diced carrots
1/2 cup diced tomatoes
4 cups water
1 can (15 ounces) white beans, drained
2 packages Apple Basil Vinaigrette Dressing Mix

In a large saucepan, sauté sausage in oil. Add vegetables and sauté 2 to 3 more minutes. Add water, beans and Apple Basil Dressing Mix. Bring to a boil, then reduce heat and simmer 15 to 20 minutes.

Makes 6 servings.
