Poaching means to cook in liquid. You can prepare your poached eggs by taking fresh eggs and cracking them into a saucepan of boiling water. The water should be 2- to 3-inches deep and heated to a brisk boil. Slowly drop in an egg and take a spoon to gently pour water over the top of the egg until it is cooked. At 2 to 3 minutes the white will be done with the yolk runny, at 3 to 4 minutes the yolk will be medium done, and at 4 to 5 minutes the yolk will be hard.

Classic Eggs Benedict

Ingredients
4 tablespoons unsalted butter
1 cup low-fat milk
1 package Simply Organic Hollandaise Sauce Mix
3  toasted and split English muffins
6  poached eggs
6  slices of ham
Directions
In a medium saucepan, melt butter on low heat. Whisk in milk, then Simply Organic Hollandaise Sauce Mix. Bring to boil, whisking constantly. Boil until desired thickness is reached.

Plate English muffin halves, top each muffin with a poached egg, slice of ham and 2 1/2 tablespoons sauce. Serve immediately.
Chef Suggestions
Add sliced tomatoes.

Use whole wheat muffins for a healthier version.

Recipe can be modified to make 8 halves, using 2 tablespoons Hollandaise per half muffin.
