Honey, like blue agave, is a very stable sweetener -- which explains why it can safely be left out on the counter. Depending upon what flowers the bees visit while gathering nectar, honey can vary in flavor and color, from mild and pale yellow to rich and deeply golden. In the hive, worker bees add enzymes, reduce moisture, and transform the nectar into honey, which they deposit into each cell of the hive's honeycomb. From there, we collect it for our enjoyment.

Mulling Spice MixMULL IT OVER

Spice cookies paired with thirst-quenching tropical drinks on a sweltering summer afternoon -- could anything be better than that? Yes. Drinks and cookies made with Simply Organic Mulling Spice! You probably think Mulling Spice only makes its appearance after the leaves begin to change and the temperatures start to drop. Well, here are some recipes that will cause you to mull over that idea. You'll want to try them all -- chances are one of them will soon be a family favorite, just liked that mulled cider in the fall.

CIDER SHORTBREAD COOKIES

1 cup melted butter
1 cup blue agave syrup (or honey)
2 eggs
1 teaspoon vanilla extract
2 tablespoons Simply Organic Mulling Spice
4 cups all-purpose flour
2 tablespoons baking powder
Plastic wrap

In a large mixing bowl, cream butter, agave, eggs and vanilla together. In a spice or coffee grinder, grind Mulling Spice to a coarse powder. Sift out any larger pieces and then whisk powder into cream mixture. Slowly add flour and baking powder, stirring constantly until completely blended. Divide dough into 4 equal parts. Roll each section into a cylinder approximately 10 inches in length by 1 ½ inches in diameter. Wrap in plastic and refrigerate a minimum of 1 hour. When ready, preheat oven to 350°, slice dough into ¼ inch rounds, place on cookie sheet and bake 8 to 10 minutes or until light golden on top. Makes 4 dozen cookies.
