
Leeks, Allium ampleoprasum var. porrum, are related to the onion and to elephant garlic, though leeks are sweeter and more subtle in flavor. Some may refer to them as poor man’s asparagus. Leeks are popular in Wales and may be found in a soup made on St. David’s Day, March 1. Wash leeks well to remove dirt from between the leaves.

Alfredo or pasta tossed with cheese and butter or cream has a long history. The dish was invented by Alfredo di Lelio at his restaurant Alfredo alla Scrofa in 1914. Mary Pickford and Douglas Fairbanks, fell in love with the dish while on their honeymoon in 1927, and brought it back to the states;
branches of Alfredo’s restaurants in the US soon followed.

2 1/2 cups water
3 tablespoons chicken flavored broth powder
4 sliced leeks (about 1 pound)
1 package Simply Organic Alfredo Mix
1 diced tomato (about 1/2 cup)
In a medium saucepan, heat water and chicken flavored broth powder to a low simmer. Meanwhile, slice leeks from bottom to leafy area. (You will have white and green slices.) Set aside. Add Alfredo Mix to the saucepan and stir until dissolved. Add tomatoes and leeks. Simmer on low until leeks are tender, usually 15 to 20 minutes.
Makes approximately 4 one-cup servings.
