PESTO NUT MASHED POTATOES
3/4 cup instant mashed potatoes
2 tablespoons dry milk
2 tablespoons dehydrated leeks (or onions)
1 teaspoon Simply Organic Sweet Basil Pesto Mix
1 tablespoon pine nuts
1 tablespoon olive oil
1 1/4 cups water (will need to be boiled)
2 tablespoons Parmesan cheese
In a quart freezer bag add all dry ingredients except Parmesan cheese. When ready to make, add oil and boiling water. Let sit 5 to 10 minutes, in a cosy if available. Add Parmesan cheese, stir and serve.
