2 cups pitted (approx. ¾ pound) plums (fresh or canned)
¼ cup red wine or red wine cider
1 package Simply Organic Southwest Taco Seasoning Mix
2 pounds pork chops at least one inch thick
Preheat oven to 375 ° F. In a blender, combine washed plums, red wine or red wine cider and Simply Organic Southwest Taco Seasoning Mix. Puree until smooth, set aside. Preheat a large skillet on medium-high heat. Brown the pork chops on each side 2 to 3 minutes. Carefully place in a casserole dish large enough so chops are in single layer. Spread plum sauce on top of each chop. Place in oven and bake for 30 minutes or until pork is completely cooked.
