Mom's Fresh Apple Cake
This is the most requested recipe at Harrisdale Homestead B&B. It is so yummy and even healthy for a dessert. It is truly worth the extra time it takes to peel and chop apples fresh from the tree (or from your favorite grower or supermarket).
3 tablespoons butter or margarine
1 cup
sugar 1 egg, slightly beaten
1 teaspoon
vanilla 1 cup flour
1 teaspoon
baking soda 1/2 teaspoon
cinnamon 1/2 teaspoon
nutmeg 1/2 teaspoon
salt 3 cups chopped apples
1/2 cup chopped pecans
whipped cream, ice cream or vanilla sauce (optional)
Cream butter and sugar. Add egg and vanilla; mix well. Mix together dry ingredients. Add to creamed mixture; stir slightly. Stir in apples and nuts. Pour into greased 9-inch pan. Bake at 350 degrees for 45 minutes. Top with whipped cream, ice cream, or vanilla sauce, if desired.
