Did you Know?

Leeks are related to the onion and to elephant garlic, though leeks are sweeter and more subtle in flavor. Some refer to them as poor man's asparagus. Leeks are popular in Wales and may be found in a soup made on St. David's Day, March 1. Wash leeks well to remove dirt from between the leaves.

Leek Soup

Ingredients

2 1/2 cups water
3 tablespoons chicken flavored broth powder
4 sliced leeks (about 1 pound)
1 package Simply Organic Alfredo Mix
1 diced tomato (about 1/2 cup)

Directions

In a medium saucepan, heat water and chicken flavored broth powder to a low simmer. Meanwhile, slice leeks from bottom to leafy area. (You will have white and green slices.) Set aside. Add Alfredo Mix to the saucepan and stir until dissolved. Add tomatoes and leeks. Simmer on low until leeks are tender, usually 15 to 20 minutes.

Chef Suggestions

Serve like a French Onion soup by adding croutons and melting mozzarella cheese on top. It's especially nice in a small serving bowl as part of a multi-course, elegant meal.
