Cinnamon Pecan Cookies
Nothing beats the undeniable comfort and unmistakable flavor of cinnamon. It's hard to believe that this rich and homey cookie comes together with such ease. Pecans add a nutty sweetness, but almonds or walnuts can substitute if that's what you have on hand.
1 roll (18-ounce) refrigerated sugar cookie dough
2 teaspoons
cinnamon 1/2 teaspoon ground
nutmeg 2 teaspoons
vanilla extract 1 1/2 cups chopped pecans
Preheat oven to 350 degrees. Spray cookie sheets with nonstick cooking spray.
Break up cookie dough into large bowl; let stand 10 to 15 minutes to soften. Add cinnamon, nutmeg, vanilla, and pecans; mix well with your fingers, the paddle attachment of an electric stand mixer, or a wooden spoon.
Drop dough by kitchen teaspoons, two inches apart, onto prepared cookie sheets.
Bake 10 to 13 minutes or until just set and golden at edges. Remove from oven and cool on baking sheets for 2 minutes; transfer to wire racks and cool completely.
