Sweet Potato Bake
Honey and brown sugar are nice elements of this sweet potato pie recipe offered by Ozella Jordan of Whitfield County, Georgia.
8 medium sweet potatoes
1/4 cup brown sugar
1/4 cup honey
1 teaspoon
cornstarch 1/2 cup pineapple juice
1/2 teaspoon
cinnamon 1/4 teaspoon
nutmeg 2 teaspoons
orange rind 2 teaspoons margarine
1/4 cup chopped walnuts
Cook sweet potatoes until tender. Poke with fork to check. Peel and cut into 1/2-inch slices. Arrange slices in a lightly greased 12 x 8 x 2-inch baking dish. Set aside.
Combine brown sugar and next eight ingredients into a saucepan. Cook over medium heat, stirring constantly until mixture begins to boil. Boil 1 minute, stirring constantly until mixture is thick and bubbly. Pour over sweet potatoes, sprinkle with nuts. Cover and refrigerate 8 hours.
Remove dish from refrigerator and let stand 30 minutes. Uncover and bake at 350 degrees for 30 minutes or until thoroughly heated.
