Black Bean Quesadillas
1/2 cup
Frontier Fiesta Black Bean Mix 1/3 cup boiling water
2 tortillas
1/4 cup shredded cheese of your choice
1/4 cup shredded lettuce
sour cream and salsa to taste
Combine Bean Mix and boiling water. Let mixture sit for five minutes.
Place one tortilla in a medium-hot, lightly oiled skillet. Spread black beans on top of tortilla, then top with cheese and lettuce. Place second tortilla shell on top. When bottom tortilla is nicely browned, turn quesadilla. Continue cooking until cheese is melted and both sides are browned.
Cross cut into four triangles, and serve with sour cream and salsa.
As prepared, each serving contains 190 calories, 4.5g total fat, 5mg cholesterol, 350mg sodium, 28g total carbohydrate and 9g protein.
