Mexican Lasagna

Frontier Fiesta Black Bean Mix (plus 1 3/4 cups warm water)
3/4 cup
Frontier Picante Mexicana Salsa Mix (plus 1 1/4 cups warm water)
8 to 10 flour tortilla shells, cut in 2-inch strips
2 cups diced mixed vegetables
8 ounces shredded cheese
Preheat oven to 350 degrees.
In a medium mixing bowl combine black beans and water. In another bowl, mix salsa and water.
Lightly grease a 2- to 3-quart casserole dish. Lay strips of tortillas to cover bottom. Lightly cover with 1/4 of the beans, then 1/4 of the salsa, 1/4 of the vegetables and 1/4 of the cheese. Repeat three times. Bake for 20 to 25 minutes.
As prepared, each serving contains 220 calories, 6g total fat, 10mg cholesterol, 390mg sodium, 31g total carbohydrate and 9g protein.
