Risotto is a traditional Italian rice dish. Its origins are in Northern Italy, where rice paddies are abundant. Risotto needs to be made following the established process; otherwise the dish is merely a rice dish. The main feature of a risotto dish is the maintenance of starch at the end of cooking that binds the grains together as a cream.

Mole Risotto
Mole Risotto

A rich, creamy, robust version of risotto -- both sweet from the cocoa and honey and spicy from the red chilies.

Ingredients
1/2 cup diced onions
3 tablespoons olive oil
1 cup Arborio rice
3 cups water or 3 cups broth made with low-sodium broth powder
1 package Simply Organic Mole Sauce Mix
1/4 cup honey or agave syrup
Directions
In a large skillet, cook onions in olive oil until caramelized (soft and lightly brown). Add rice and brown 2 to 3 minutes.

Add water (1 cup at a time), stirring in Mole Mix with first cup. (Keep heat so dish is at a low simmer.) Finish adding water and simmer until rice is al dente.

Remove from heat and stir in honey. Serve immediately.
Chef Suggestions
Add 1/4 cup raisins at end.

Substitute orzo pasta for rice.

Garnish with cilantro.
